Can I place some kind of drywall or plaster to cover up the stone, and still be able to use the fireplace safely? I would like a clean, solid look.

The stone (masonry) may protect the wall from the heat of the fireplace. The stone on the floor may be a hearth. Check with the fireplace manufacturer and the building codes.
An architect or interior designer can help you with changes.
One can use other earth-tone colors in the room, such as green, gold, terra-cotta, brown, tan, etc.
I assume you have a wood burning stove, If you don’t like the stones color PAINT IT, just prime it first and wallah. The stone is there to protect the walls and floor from heat. Don’t cover it with drywall. you could cover with plywood and then install gorgeous slate tiles, seal with a wet look sealer for a very zen contemporary look
